Step 1: Prep the Chicken
Place the chicken in a 4–6 quart slow cooker, arranging in a single layer for even cooking.
Step 2: Whisk the Sauce
In a medium bowl, combine the dry Italian dressing mix, cream of chicken soup, and chicken broth (or water). Whisk until smooth.
Step 3: Layer the Ingredients
Scatter the cream cheese cubes over the chicken. Pour the soup mixture evenly on top, making sure all the chicken is covered.
Step 4: Slow Cook
Cover and cook on Low for 4–6 hours or High for 2–3 hours, until the chicken is tender and begins to fall apart.
Step 5: Shred and Blend
Shred the chicken in the pot using two forks. Stir well to incorporate the melted cream cheese into the sauce until smooth and creamy.
Step 6: Final Rest
Let the chicken sit on the Warm setting for 5–10 minutes to thicken the sauce and allow the flavors to fully meld. Serve and enjoy!
