Step 1: Prepare the pastry
Preheat your oven to 400°F. Line a baking sheet with foil and lightly grease it. Unfold the thawed puff pastry and roll it out slightly to smooth any creases. Cut into 2-inch squares using a knife or pizza cutter.

Step 2: Add the Brie
Cut the Brie into small 1/2-inch cubes. Place one cube in the center of each pastry square, pressing it down gently.
Tip: Leave the rind on—it’s edible and helps the cheese keep its shape as it melts.

Step 3: Add the preserves
Spoon about 1/2 teaspoon of peach preserves onto each piece of Brie.
Tip: Don’t overfill, as the jam will loosen while baking and may spill over.

Step 4: Bake
Place the pastries in the oven and bake for 12–15 minutes, or until they’re puffed up and golden brown. The edges should look crisp and flaky, and the jam should be bubbling slightly.

Step 5: Cool slightly
Remove from the oven and let them sit for 5–10 minutes before serving.
