Instructions
Step 1: Prep the Produce
Rinse the green beans and break them into bite-sized pieces, removing the ends. Wash the potatoes and cut them into quarters, or smaller pieces if needed so they cook evenly.
Step 2: Cook the Aromatics
In a large pot over medium heat, warm the olive oil or melt the butter. Add the diced onion and sauté for about 5 minutes until softened. Stir in the garlic and cook for another minute until fragrant.
Step 3: Combine Ingredients
Add the green beans and potatoes to the pot. Pour in the broth and season with salt, pepper, smoked paprika, and red pepper flakes. Stir in the bacon or ham if desired.
Step 4: Simmer Until Tender
Bring everything to a boil, then reduce the heat to low. Cover and let simmer for 20–25 minutes, until the potatoes are fork-tender and the green beans are fully cooked.
Step 5: Serve
Taste and adjust seasoning as needed. Sprinkle with freshly chopped parsley and serve warm as a satisfying side dish or a simple main.
