Hearty Classic Ground Beef and Vegetable Soup (or Stew)

This recipe is for a thick, comforting, and incredibly flavorful soup or stew, packed with ground beef, potatoes, and a medley of colorful vegetables. It’s the perfect one-pot meal for a chilly evening and is sure to become a family favorite!

📝 Ingredients

For the Base:

  • 1.5 lbs ground beef (80/20 preferred for flavor)

  • 1 large yellow onion, diced

  • 2 cloves garlic, minced

  • 1 Tbsp olive oil or vegetable oil

  • 6 cups beef broth (low sodium)

  • 1 (14.5 oz) can diced tomatoes, undrained

  • 1 (15 oz) can tomato sauce

  • 2 Tbsp Worcestershire sauce

For the Vegetables:

  • 4-5 medium potatoes (Yukon Gold or Russet), peeled and diced into 1-inch pieces

  • 1 cup carrots, sliced or diced (optional, but recommended)

  • 1 cup frozen cut green beans

  • 1 cup frozen corn

  • 1 cup frozen peas

Seasoning:

  • 1 tsp dried thyme

  • 1 tsp dried oregano

  • 1/2 tsp black pepper

  • 1 Tbsp salt (adjust to taste)

  • 1 bay leaf
