🧾 Ingredients
For the Salad
3 large cucumbers, thinly sliced
2 cups cherry tomatoes (or 3 large tomatoes), halved
1 medium red onion, thinly sliced
2 tablespoons fresh parsley or dill (optional)
For the Marinade
½ cup white vinegar or apple cider vinegar
¼ cup olive oil
2 tablespoons sugar (optional for sweetness)
1 teaspoon salt
½ teaspoon black pepper
1 teaspoon dried oregano or Italian seasoning
1 garlic clove, minced (optional)
🔪 Preparation Method

  1. Prepare the Vegetables
    Wash the cucumbers and tomatoes thoroughly. Slice the cucumbers into thin rounds and cut the tomatoes into halves or wedges. Slice the onion very thin so it blends well with the salad.
  2. Make the Marinade
    In a large bowl, whisk together the vinegar, olive oil, sugar, salt, pepper, oregano, and minced garlic until well combined.
  3. Combine Everything
    Add the cucumbers, tomatoes, and onions to the bowl with the marinade. Toss gently until all the vegetables are evenly coated.
  4. Marinate
    Cover the bowl and place it in the refrigerator for at least 1 hour. For best flavor, let it marinate 2–4 hours so the vegetables absorb the dressing.
  5. Serve
    Before serving, toss the salad again and sprinkle fresh parsley or dill on top for extra freshness.
