Step 1: Prepare the Toast
Toast the bread until golden and crisp. For extra flavor, spread a little butter over the slices while they’re still warm.
Tip: Thick, sturdy bread like sourdough works best to hold the creamy topping without becoming soggy.
Step 2: Cook the Aromatics
In a medium skillet, melt the butter over medium heat. Add the chopped shallot or onion and cook for 2–3 minutes until softened. Stir in the garlic and cook for about 30 seconds, just until fragrant.
Step 3: Build the Sauce
Sprinkle the flour over the mixture and cook for about 1 minute to eliminate the raw taste. Slowly whisk in the milk, adding it gradually to keep the sauce smooth. Continue cooking for 2–3 minutes until it thickens to a creamy consistency.
Tip: Adding the milk slowly helps prevent lumps and creates a silky texture.
Step 4: Add the Peas
Mix in the frozen peas and cook for another 2–3 minutes until heated through. Season with salt, pepper, and a pinch of nutmeg if using. Stir in the lemon juice at the end to brighten the flavor.

Spoon the creamy peas over the toasted bread and garnish with fresh herbs like chives or mint if desired. Serve right away for the best texture and flavor.
