Instructions
Step 1: Heat Oil
In a large pot, heat olive oil over medium heat.
Step 2: Sauté Vegetables
Add onion, carrot, and celery. Cook for 5 minutes until softened.
Step 3: Add Garlic
Stir in garlic and cook for 1 minute until fragrant.
Step 4: Add Beans
Add white beans to the pot and stir well.
Step 5: Pour Broth
Add vegetable broth and mix everything together.
Step 6: Season
Add thyme, rosemary, salt, and pepper.
Step 7: Simmer
Bring to a boil, then reduce heat and simmer for 15–20 minutes.
Step 8: Blend (Optional)
Blend part of the soup for a creamy texture while leaving some beans whole.
Step 9: Add Lemon Juice
Stir in lemon juice for freshness.
Step 10: Adjust Seasoning
Taste and adjust salt and spices if needed.
Step 11: Serve
Serve hot and garnish with fresh parsley.
